Easy Holiday Recipes | Yummy Pumpkin Loaf

Although I often upload pictures of food I’ve made to facebook, I don’t usually blog about it.

However, this holiday season I discovered a recipe so delicious and so easy I had to share it with you.

How easy you ask?

That’s it.  A can of pumpkin and a box of cake mix.

No eggs, no oil, just a can of pumpkin and a box of cake mix.

For those of you desiring some sort of specificity, cake mixes usually come in two sizes, and I always get the bigger one, which is 18.25 oz.

You mix the two ingredients together and then bake it at 350 for about 30-35 minutes.

I originally found the recipe on Pinterest and it was for pumpkin muffins.

However, after making the pumpkin muffins once, I realized that I don’t normally possess the level of patience it requires to drop precise amounts of batter into little pieces of paper.

On a whim one day I decided to make the same recipe only instead of a muffin tin, I’d use a loaf pan.

It worked out perfectly and the pumpkin loaf was born.

I’ve made it for several friends and brought it along to parties, and it’s always a hit!
